What is a sitemap:
A sitemap is a file that contains the web-site structure. It will primarily contain URLs of different pages or sections of the web-site. You can provide additional information for each URL. It can be in text, HTML, and XML formats.
A text file containing all the URLs of a web-site can be treated as a sitemap. However, using HTML or XML, you can specify more information (change frequency, title, description and similar) about each of the URLs.

What are Image and Video Sitemaps?
Image sitemaps will contain URLs for images with information about the images.
Video sitemap will contain URLs for videos in your site and information about the videos.
Sitemaps can be very helpful when your site is a very new one, has significant dynamic contents, your Ajax related pages cannot be easily crawled, you have contents that are not linked much or not linked at all.
